Honey Butter Dinner Rolls

  • 3 ½ cups (440g) all-purpose flour
  • ¼ cup (50g) granulated sugar
  • 2 ¼ tsp (7g) instant yeast
  • 1 cup (240ml) warm milk
  • 4 tbsp (57g) unsalted butter, softened
  • 1 tsp salt
  • 2 large eggs, room temperature
  • 3 tbsp (60ml) honey, plus extra for glazing
  • 2 tbsp melted butter (for glaze)

Instructions

  1. Activate the yeast: In a large mixing bowl, combine 1 cup (240ml) warm milk (about 110°F/43°C) with 2 ¼ tsp instant yeast and 1 tbsp sugar. Stir gently and let sit for 5-10 minutes until foamy.
  2. Mix the dough: Add 3 ½ cups (440g) all-purpose flour, remaining ¼ cup (50g) sugar, 1 tsp salt, 4 tbsp (57g) softened unsalted butter, 2 large eggs, and 3 tbsp (60ml) honey to the bowl. Mix on low speed until ingredients come together.
  3. Knead the dough: Increase mixer speed to medium and knead for 7-8 minutes until dough is smooth, elastic, and slightly tacky but not sticky. If kneading by hand, knead on floured surface for 8-10 minutes.
  4. First rise: Form dough into a ball, place in greased bowl, cover with damp towel or plastic wrap, and let rise in warm spot for 1 to 1 ½ hours until doubled in size.
  5. Shape the rolls: Punch down dough, turn onto floured surface, divide into 12 equal portions (~60g each), and shape each into smooth balls.
  6. Arrange in pan: Place rolls in greased 9×13-inch baking pan, spacing slightly apart. Cover and let rise for 30-45 minutes until puffed.
  7. Preheat oven to 375°F (190°C). Bake rolls for 18-22 minutes until golden brown and hollow sounding when tapped.
  8. Glaze with honey butter: Brush warm rolls with mixture of 2 tbsp melted butter and 2 tbsp honey.
  9. Cool slightly and serve warm. Rolls stay soft for days if stored properly.

Notes

Use warm milk (not hot) to activate yeast. Knead dough until smooth and elastic. Let dough rise fully for best texture. Brush rolls with honey butter glaze immediately after baking for moisture and shine. Store rolls in airtight container at room temperature for up to 3 days or freeze for up to 3 months.
