  • Salt and freshly ground black pepper, to taste
  • 1 bunch fresh asparagus (about 1 pound), trimmed
  • 1 small lemon, zested and juiced (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or a silicone mat for easy cleanup.
  2. Trim the asparagus by snapping off the tough woody ends (about an inch). Arrange asparagus in a single layer on the baking sheet, drizzle with 1 tablespoon olive oil, salt, and pepper. Toss gently to coat.
  3. In a small bowl, whisk together honey, balsamic vinegar, minced garlic, Dijon mustard, 1 tablespoon olive oil, lemon zest, and juice if using until smooth and glossy.
  4. Pat salmon fillets dry with a paper towel. Lightly salt and pepper both sides.
  5. Place salmon fillets skin-side down on the baking sheet nestled among the asparagus. Brush each fillet generously with the honey balsamic glaze, reserving some for basting later.
  6. Roast in the oven for 12-15 minutes depending on thickness, until salmon flakes easily with a fork. Halfway through, baste the fillets with the remaining glaze.
  7. Check that asparagus is tender-crisp and bright green, and salmon is opaque and flakes easily. Tent loosely with foil if glaze darkens too much.
  8. Remove from oven and let rest for 2 minutes to lock in juices and let glaze set.
