This homemade honey elderberry syrup with cinnamon is a simple, immune-boosting remedy made with just four ingredients. It’s kid-approved, cost-effective, and tastes amazing.

Ingredients

Scale
  • 1 cup (about 150g) dried elderberries
  • 4 cups (960ml) filtered water
  • 23 cinnamon sticks (about 3 inches each)
  • 1 cup (340g) raw honey
  • Optional: fresh ginger slices (about 1 inch), whole cloves (3-4), or a vanilla bean split open

Instructions

  1. Rinse the dried elderberries in a fine mesh strainer under cool water.
  2. In a medium saucepan, combine the rinsed elderberries, 4 cups of filtered water, and cinnamon sticks. Add optional ginger or cloves if using.
  3. Bring the mixture to a rolling boil over medium-high heat.
  4. Reduce heat to low and simmer gently for 30-40 minutes, until the liquid is reduced by about half and deeply colored.
  5. Test for doneness: the liquid should be fragrant and slightly sweet from the cinnamon.
  6. Place a fine mesh strainer over a large bowl or liquid measuring cup. Carefully pour the hot mixture through the strainer, pressing on the berries with the back of a spoon to extract all liquid. Let berries cool before discarding.
  7. Let the strained liquid cool for 10-15 minutes until lukewarm (warm but not hot to the touch).
  8. Stir in the raw honey until fully dissolved. The mixture will become glossy and slightly thicker.
  9. Pour the syrup into a clean glass jar or bottle. Seal tightly and let cool completely before refrigerating.

Notes

Do not add honey to boiling liquid as it will destroy beneficial enzymes. Strain while hot for easier processing. The syrup thickens slightly as it cools. Flavors deepen after a few days in the fridge. Not suitable for infants under 1 year due to honey content.
