A quick, easy, and comforting homemade hamburger helper recipe made with just five main ingredients. This creamy, cheesy, and savory dish is perfect for busy weeknights and family dinners.

Ingredients

Scale
  • 1 pound (450g) ground beef, preferably 80/20
  • 2 cups (about 200g) uncooked elbow macaroni
  • 1 ½ cups (about 170g) shredded cheddar cheese
  • 2 cups (480ml) whole milk or 2% milk
  • 1 cup (240ml) beef broth
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste (start with ½ teaspoon salt)

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and cook for 5-7 minutes, breaking it apart until browned. Drain excess fat if needed.
  2. Sprinkle onion powder, garlic powder, salt, and pepper over the beef. Stir well and let the spices bloom for about a minute.
  3. Pour in milk and beef broth. Stir in uncooked elbow macaroni. Bring to a gentle boil over medium heat.
  4. Reduce heat to medium-low and cover loosely with a lid. Cook pasta for 12-15 minutes, stirring occasionally to prevent sticking, until pasta is tender but al dente.
  5. Remove lid and sprinkle shredded cheddar cheese over the pasta. Stir vigorously until cheese melts into a creamy sauce. Add a splash of milk if sauce is too thick.
  6. Taste and adjust salt and pepper if needed. Serve immediately while hot.

Notes

If liquid absorbs too quickly before pasta is tender, add more broth or milk. Use freshly shredded cheddar cheese for best melting and creamy texture. Let dish rest a few minutes after cooking to thicken sauce. For dairy-free, use plant-based milk and cheese alternatives. Add veggies like peas or bell peppers during last 5 minutes for extra nutrition.
