Homemade Asparagus Tart

A fresh and comforting spring brunch tart featuring roasted asparagus, creamy cheese filling, and flaky puff pastry. Easy to make and perfect for gatherings or light dinners.

  • 1 bunch asparagus (about 1 pound or 450 grams), trimmed and snapped
  • 1 sheet puff pastry (about 9 x 12 inches or 23 x 30 cm), thawed
  • 8 ounces cream cheese, softened
  • 1/2 cup grated Parmesan cheese (about 50 grams)
  • 1/2 cup sour cream or Greek yogurt (about 120 ml)
  • 1 large egg, room temperature
  • 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste
  • Optional: pinch of crushed red pepper flakes
  • 1 tablespoon olive oil or butter, for drizzling or brushing
  • Zest of 1 lemon (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the asparagus by snapping off tough ends (about 1 to 2 inches). Toss with 1 tablespoon olive oil, salt, and pepper. Spread on a parchment-lined baking sheet and roast for 8-10 minutes until slightly tender but still crisp. Set aside to cool.
  3. In a medium bowl, combine softened cream cheese, Parmesan, sour cream or Greek yogurt, egg, thyme, lemon zest (if using), salt, and pepper. Whisk until smooth and creamy. Add a teaspoon of milk if mixture is too thick.
  4. On a parchment-lined baking sheet, unfold or roll out the puff pastry to roughly 9 x 12 inches. Lightly score a 1-inch border around the edges without cutting through.
  5. Spread the cheese mixture evenly within the scored border using a spatula or back of a spoon.
  6. Arrange the roasted asparagus stalks on top of the cheese mixture in neat rows or a crisscross pattern. Optionally drizzle with olive oil or add thin lemon slices.
  7. Bake the tart in the oven for 20-25 minutes until the pastry is golden and puffed and the cheese filling is set. Cover edges with foil halfway through if browning too quickly.
  8. Remove from oven and let cool for 5 minutes before slicing. Serve warm or at room temperature.

Notes

Roast asparagus before adding to tart to prevent soggy crust and enhance sweetness. Keep puff pastry cold until ready to use. Score the border to create a raised edge that holds filling. Brush edges with egg or milk for golden sheen. Avoid overcrowding asparagus and ensure it is dry before baking. Cover edges with foil if browning too fast.
