A quick and easy 5-ingredient casserole featuring ground beef, black beans, corn, cheddar cheese, and taco seasoning. This hearty dish is perfect for busy weeknights and family dinners.

  • 1 pound ground beef (80/20 lean-to-fat ratio recommended)
  • 15 oz canned black beans, drained and rinsed
  • 15 oz canned corn, drained (or thawed frozen corn)
  • 2 cups shredded sharp cheddar cheese
  • 1 packet (about 2 tablespoons) Mexican-style taco seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a large skillet over medium-high heat. Add the ground beef and cook for 7-8 minutes, breaking it apart until browned but not dried out. Drain excess fat if necessary.
  3. Sprinkle taco seasoning over the beef and stir well. Cook for another 2 minutes to let the flavors meld.
  4. Stir in the drained black beans and corn. Cook for 3-4 minutes until heated through.
  5. Transfer the beef mixture evenly into a 9×13 inch baking dish.
  6. Generously sprinkle shredded cheddar cheese over the top.
  7. Bake uncovered for 15-20 minutes until the cheese bubbles and turns golden brown around the edges.
  8. Let the casserole rest for 5 minutes before serving.

Notes

For a smoky flavor, add a pinch of smoked paprika with the taco seasoning. Avoid overbaking the cheese to prevent burning; cover with foil if browning too fast. Ground turkey or plant-based beef can be used as alternatives. Leftovers freeze well for up to 2 months.
