Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water (110°F/43°C) with sugar and yeast. Stir gently and let sit until foamy and bubbly, about 10 minutes.
  2. Mix the dough: Add melted butter, salt, and flour to the yeast mixture. Stir until a shaggy dough forms. Add more flour if too sticky.
  3. Knead the dough: On a floured surface, knead for 8-10 minutes until smooth, elastic, and slightly tacky.
  4. First rise: Place dough in a lightly oiled bowl, cover, and let rise in a warm spot until doubled in size, about 1 hour.
  5. Preheat oven to 450°F (230°C). Prepare baking soda bath: Bring 10 cups (2.4 L) water to a boil and carefully add baking soda.
  6. Shape the pretzels: Punch down dough and divide into 8 equal pieces. Roll each into a 20-inch rope and shape into a large heart.
  7. Boil pretzels: Using a slotted spoon, lower 2-3 pretzels at a time into boiling baking soda water. Boil 30 seconds per side, then remove to parchment-lined baking sheets.
