  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 cup low-sodium chicken broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 1/4 tsp crushed red pepper flakes (optional)
  • 1 tbsp fresh lime juice

Instructions

  1. Trim any excess fat from the chicken. Rinse and pat dry with paper towels.
  2. In a small bowl, mix garlic powder, onion powder, smoked paprika, dried oregano, salt, black pepper, and crushed red pepper flakes if using.
  3. Sprinkle the seasoning evenly over both sides of the chicken.
  4. Place the seasoned chicken in the slow cooker in a single layer.
  5. Pour the chicken broth over the chicken.
  6. Cover and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours until the chicken is tender and easily shredded.
  7. Remove the chicken and shred it using two forks or shredding claws.
  8. Return shredded chicken to the slow cooker, add fresh lime juice, and stir to combine.
  9. Adjust seasoning with salt or pepper if needed. Add a splash of broth or water if the chicken seems dry.

Notes

Use chicken thighs for juicier meat. Avoid opening the slow cooker lid during cooking to maintain temperature. Let chicken rest 5 minutes before shredding for easier shredding. Save leftover cooking juices for soups or rice bowls. If using frozen chicken, increase cooking time by 1-2 hours on low.
