Healthy Chicken Sausage Orzo Recipe for Perfect Weeknight Dinner

A quick, flavorful, and wholesome weeknight dinner featuring chicken sausage, broccoli, and creamy orzo. Packed with lean protein and veggies, it’s satisfying and easy to make.

Ingredients

  • Chicken Sausage (pre-cooked, garlic and herb or smoked variety)
  • 1 cup Orzo
  • 2 cups Broccoli Florets (fresh or frozen)
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic (minced)
  • 2 cups Chicken Broth
  • Parmesan Cheese (optional)
  • Salt and Pepper (to taste)

Instructions

  1. Slice the chicken sausage into rounds. Chop the broccoli into small florets. Mince the garlic.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sausage slices and cook for 3-4 minutes, flipping occasionally, until browned. Remove from the skillet and set aside.
  3. In the same skillet, add another tablespoon of olive oil. Toss in the minced garlic and cook for 30 seconds, just until fragrant. Add the broccoli florets, season with a pinch of salt, and cook for 3-5 minutes until they start to soften.
  4. Stir the uncooked orzo into the skillet with the broccoli. Cook for 1 minute to toast the orzo slightly.
  5. Pour in 2 cups of chicken broth and bring to a simmer. Cover and cook for 8-10 minutes, stirring occasionally, until the orzo is tender and has absorbed most of the liquid.
  6. Stir the cooked sausage back into the skillet along with the broccoli and orzo. Sprinkle with Parmesan cheese (if using) and season with salt and pepper to taste. Serve warm.
