Ingredients

Scale
  • 2 cups rolled oats
  • 1 cup fresh blueberries
  • 1/3 cup honey
  • 1/2 cup unsweetened applesauce
  • 1/3 cup melted coconut oil
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 tablespoon chia seeds (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 baking dish with parchment paper.
  2. In a large bowl, combine rolled oats, ground cinnamon, chia seeds (optional), and a pinch of salt.
  3. In a separate bowl, whisk together melted coconut oil, honey, unsweetened applesauce, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until well combined.
  5. Gently fold in fresh blueberries, ensuring they’re evenly distributed.
  6. Spread the mixture into the prepared baking dish, pressing down lightly to create an even layer.
  7. Bake for 25-30 minutes, or until the edges are golden brown and the center is set.
  8. Remove from the oven and allow the bars to cool completely in the pan on a wire rack.
  9. Once cooled, lift the parchment paper out and slice into bars. Serve immediately or store for later.
