Crispy, golden fries loaded with colorful sautéed veggies, made healthier and easier with an air fryer. Perfect for a guilt-free snack or side dish with a nutritious twist.

  • 2 large russet potatoes, cut into ¼-inch thick fries
  • 1 tablespoon olive oil (or avocado oil)
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • 1 small red bell pepper, diced
  • 1 small green bell pepper, diced
  • ½ medium red onion, finely chopped
  • 1 small zucchini, diced
  • 1 teaspoon olive oil
  • ¼ teaspoon cumin (optional)
  • Salt and pepper, to taste
  • Fresh parsley or cilantro, chopped (optional garnish)
  • Grated Parmesan or vegan cheese (optional garnish)
  • Drizzle of hot sauce or Greek yogurt (optional garnish)

Instructions

  1. Wash and peel the russet potatoes if desired. Cut into ¼-inch thick fries and soak in cold water for at least 20 minutes to remove excess starch.
  2. Drain and pat the fries completely dry. Place in a large bowl, drizzle with olive oil, then sprinkle smoked paprika, garlic powder, salt, and pepper. Toss to coat evenly.
  3. Preheat air fryer to 400°F (200°C) for 3 minutes. Arrange fries in a single layer in the basket without overcrowding. Cook for 15-18 minutes, shaking or flipping halfway through until golden and crisp.
  4. While fries cook, heat 1 teaspoon olive oil in a skillet over medium heat. Add diced bell peppers, red onion, and zucchini. Season with cumin, salt, and pepper. Sauté for 5-7 minutes until veggies soften but remain slightly crunchy.
  5. Transfer fries to a serving plate and pile sautéed veggies on top. Add optional garnishes like fresh herbs, cheese, or a drizzle of hot sauce or Greek yogurt. Serve immediately.

Notes

Soaking potatoes removes starch and improves crispiness. Dry fries thoroughly before seasoning. Avoid overcrowding the air fryer basket to ensure even cooking. For extra crispiness, air fry an additional 2-3 minutes if needed. Leftovers reheat best in the air fryer at 375°F for 4-5 minutes. Can substitute sweet potatoes with adjusted cook time (12-15 minutes).
