A quick and easy party snack combining sweet Medjool dates stuffed with creamy goat cheese and wrapped in smoky bacon, perfect for gatherings and casual get-togethers.

  • 20 large Medjool dates, pitted
  • 4 oz (115 g) soft, spreadable goat cheese
  • 10 slices thick-cut bacon
  • Toothpicks for securing bacon
  • Optional: 1/4 cup chopped toasted almonds or walnuts
  • Optional: Honey or balsamic glaze for drizzling

Instructions

  1. Preheat oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or a silicone baking mat.
  2. If dates are not pitted, slice one side open and remove the pit carefully.
  3. In a small bowl, soften goat cheese with a spoon. Mix in chopped toasted nuts if using.
  4. Stuff each date with about 1 teaspoon (5 g) of goat cheese mixture.
  5. Cut each bacon slice in half crosswise. Wrap one half-slice around each stuffed date and secure with a toothpick.
  6. Place wrapped dates seam side down on the baking sheet with space between each.
  7. Bake for 20-25 minutes until bacon is crisp and golden, rotating pan halfway through if needed.
  8. Let the dates rest for 5 minutes on the tray. Drizzle with honey or balsamic glaze if desired before serving.

Notes

Use thick-cut bacon for best crispiness and to avoid burning. Secure bacon with toothpicks to prevent unraveling. Optionally add nuts to goat cheese for crunch or drizzle honey/balsamic glaze after baking. Let dates rest after baking to set cheese and meld flavors. Can be prepared ahead and refrigerated before baking. Reheat in oven to crisp bacon again; avoid microwaving.
