Instructions

  1. Mix the dry ingredients: In a large bowl, whisk together all-purpose flour, granulated sugar, baking powder, and a pinch of salt.
  2. Combine the wet ingredients: In a separate bowl, whisk milk, eggs, and vanilla extract until smooth.
  3. Make the batter: Gradually add the wet ingredients to the dry ingredients, whisking until the batter is smooth and lump-free.
  4. Heat the oil: Pour vegetable oil into a large pot or skillet, filling it about 2 inches deep. Heat to 350°F (175°C).
  5. Fry the bites: Using a tablespoon, carefully drop small dollops of batter into the hot oil. Fry in batches to avoid overcrowding.
  6. Cook until golden: Fry each batch for 2-3 minutes, flipping halfway, until the bites are golden brown and crispy.
  7. Drain excess oil: Remove the bites with a slotted spoon and place them on a paper towel-lined plate to drain.
