These fudgy mint chocolate brownie bites are a perfect bite-sized treat combining rich chocolate with a refreshing hint of mint. Ideal for St. Patrick’s Day or any time you want a quick, indulgent dessert.

  • 4 ounces (115g) semi-sweet chocolate chips, melted
  • 1/4 cup (25g) unsweetened cocoa powder
  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (50g) packed brown sugar
  • 2 large eggs, room temperature
  • 3/4 cup (95g) all-purpose flour, sifted
  • 1/2 teaspoon peppermint extract
  • 1/4 teaspoon salt
  • Green sanding sugar or sprinkles, for decorating (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper or spray with non-stick spray. If using a mini muffin tin, lightly grease each cup.
  2. Melt the butter and chocolate chips together in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth and combined (about 1-2 minutes). Let cool slightly.
  3. In a large bowl, whisk together granulated sugar, brown sugar, and eggs until pale and slightly thickened, about 2-3 minutes.
  4. Slowly pour the melted chocolate mixture into the sugar and egg mixture, whisking gently to combine.
  5. Sift the cocoa powder, flour, and salt over the wet ingredients. Using a rubber spatula, fold everything together until just combined—do not overmix.
  6. Add peppermint extract and fold gently. Taste a tiny bit of batter to check the mint level before baking.
  7. Pour batter into the prepared pan or spoon into mini muffin cups, filling about 3/4 full.
  8. Sprinkle the green sanding sugar or sprinkles on top for a festive touch.
  9. Bake for 18-22 minutes if using a 9×9 pan, or 12-15 minutes for mini bites. The edges should be set but the center slightly soft.
  10. Cool completely on a wire rack before cutting into bites or removing from the tin.

Notes

Do not overmix the batter to avoid cakey brownies. Use room temperature eggs for better texture. Bake until a toothpick inserted comes out with moist crumbs. If brownies are too gooey after cooling, refrigerate for 15-20 minutes before slicing. Adjust peppermint extract cautiously to avoid overpowering mint flavor.
