  • 1 cup (245g) plain full-fat Greek yogurt (or vanilla Greek yogurt)
  • 1/2 cup (125g) creamy peanut butter (natural or classic)
  • 23 tablespoons (30-45ml) honey or maple syrup, to taste
  • 1 teaspoon (5ml) vanilla extract (optional)
  • Pinch of salt (especially if peanut butter is unsalted)
  • 23 tablespoons (30-45g) mini chocolate chips or melted dark chocolate (for topping)
  • Optional: 1-2 tablespoons crushed pretzels, chopped nuts, or shredded coconut (for topping)

Instructions

  1. In a medium mixing bowl, combine Greek yogurt, peanut butter, honey or maple syrup, vanilla extract, and a pinch of salt. Stir until completely smooth and creamy.
  2. Line a mini muffin tin or silicone mold with mini paper liners, or lightly spray with nonstick spray. Alternatively, line a baking sheet with parchment paper.
  3. Using a small cookie scoop or tablespoon, drop about 1 heaping tablespoon of the mixture into each cavity or onto the baking sheet. Tap the tray gently to even out the tops.
  4. Sprinkle mini chocolate chips, crushed pretzels, or chopped nuts over each bite. If drizzling with chocolate, wait until after freezing.
  5. Transfer the tray to the freezer and freeze for at least 2 hours, or until the bites are completely firm. Overnight is even better.
  6. If desired, melt dark chocolate chips in a microwave-safe bowl in 20-second bursts, stirring until smooth. Remove frozen bites from molds, drizzle with melted chocolate, and return to the freezer for 5 minutes to set.
  7. Serve straight from the freezer. Let sit at room temperature for 1-2 minutes for a softer bite.

Notes

Use full-fat Greek yogurt for the creamiest texture. Taste the mixture before freezing and adjust sweetness as needed. For a vegan or dairy-free version, use plant-based yogurt and maple syrup. Store in a freezer-safe container for up to 1 month. Let bites sit at room temperature for 1-2 minutes before eating for best texture.
