A simple, refreshing summer drink combining juicy watermelon, fresh mint, lime juice, and a touch of sweetener for a light and hydrating beverage.

Ingredients

Scale
  • 4 cups (600g) fresh cubed watermelon, seedless if possible
  • 1012 fresh mint leaves, gently bruised
  • 2 tablespoons (30ml) fresh lime juice
  • 12 tablespoons (15-30ml) honey, agave syrup, or simple syrup (optional)
  • 2 cups (480ml) cold water (can substitute sparkling water)
  • Ice cubes, for serving

Instructions

  1. Cut about 4 cups (600g) of watermelon into cubes, removing all seeds.
  2. Gently bruise 10-12 fresh mint leaves to release their oils.
  3. Add watermelon cubes and bruised mint leaves to a blender. Pulse a few times, then blend on high for about 30 seconds until smooth.
  4. Optional: Pour the blended mixture through a fine mesh strainer into a large bowl or pitcher to remove pulp and mint bits, pressing with a spoon to extract juice.
  5. Stir in 2 tablespoons (30ml) of freshly squeezed lime juice and 1-2 tablespoons (15-30ml) of sweetener if desired. Adjust sweetness to taste.
  6. Pour 2 cups (480ml) of cold water into the pitcher and stir gently to combine.
  7. Add ice cubes to the pitcher or serve over ice in glasses. Garnish with a sprig of fresh mint or a thin watermelon wedge.

Notes

Do not over-blend to avoid foam. Straining is optional but recommended for a smoother texture. Adjust sweetener based on watermelon sweetness. For a slushy version, freeze watermelon cubes before blending. Mint can be substituted with basil or cilantro for different herbal notes.
