Fresh Watermelon Cucumber Salad Recipe with Tajin Lime and Mint

A light, refreshing, and easy summer side salad combining juicy watermelon, crisp cucumber, fresh mint, and a zesty Tajin lime dressing. Perfect for hot days and quick meals.

  • 4 cups seedless watermelon, cut into bite-sized cubes
  • 2 medium English cucumbers, peeled and diced
  • ¼ cup fresh mint leaves, chopped
  • Juice of 2 fresh limes (about 3 tablespoons)
  • 1 to teaspoons Tajin seasoning
  • 1 teaspoon honey or agave syrup (optional)
  • Pinch of salt

Instructions

  1. Cut about 4 cups (about 600 grams) of seedless watermelon into bite-sized cubes and place in a large mixing bowl.
  2. Peel and dice 2 medium English cucumbers (roughly 400 grams) and add to the bowl with watermelon.
  3. Finely chop ¼ cup of fresh mint leaves (about 10 grams) and toss into the bowl.
  4. In a small bowl, combine the juice of 2 limes (about 3 tablespoons or 45 ml), 1 to 1½ teaspoons of Tajin seasoning, 1 teaspoon of honey or agave syrup (optional), and a pinch of salt. Whisk gently until well blended.
  5. Pour the dressing over the watermelon, cucumber, and mint. Gently toss everything together until evenly coated, being careful not to mash the watermelon.
  6. Cover and refrigerate the salad for 15-20 minutes to let flavors meld and chill.
  7. Before serving, stir the salad and adjust seasoning with more Tajin or lime juice if desired.

Notes

If watermelon is extra juicy, drain excess liquid before tossing to avoid sogginess. Adjust Tajin seasoning to taste, starting with less to avoid overpowering the salad. Refrigerate before serving for best flavor. Can substitute Persian cucumbers or add thinly sliced red onion for variation. Use agave syrup instead of honey for a vegan option.
