A quick and easy layered dessert featuring fresh strawberries, blueberries, whipped cream, vanilla Greek yogurt, and angel food cake or pound cake. Perfect for summer celebrations and last-minute entertaining.

  • Fresh blueberries
  • 1 cup whipped cream (store-bought or homemade)
  • 1 cup vanilla Greek yogurt (or dairy-free coconut yogurt)
  • Angel food cake or pound cake, cut into cubes
  • 1 tablespoon honey or maple syrup (optional)
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Rinse the strawberries and blueberries under cold water. Pat dry gently with a kitchen towel. Hull and slice the strawberries into thin pieces, about ¼-inch thick. Set aside.
  2. Cut the angel food cake or pound cake into roughly 1-inch cubes. Optionally drizzle a teaspoon of honey over the cubes and toss gently.
  3. In a chilled bowl, whip the heavy cream with a whisk or electric mixer until soft peaks form. Optionally add a teaspoon of honey or powdered sugar while whipping.
  4. Fold the vanilla Greek yogurt gently into the whipped cream. Taste and add a bit more honey if desired.
  5. Assemble the parfaits by layering about ¼ cup (60g) of cake cubes at the bottom of each glass or cup, followed by about 3 tablespoons of the creamy yogurt-cream mixture, then a layer of strawberries, another cream layer, blueberries, and finish with a final creamy topping. Aim for 3-4 layers total.
  6. Top each parfait with a few fresh berries and a sprig of mint if available. Cover and chill in the refrigerator for at least 30 minutes before serving.

Notes

Use well-chilled cream and bowls for best whipped cream results. Gently fold yogurt into whipped cream to keep fluffiness. Use ripe but firm berries to avoid watery parfaits. Assemble close to serving time to prevent soggy cake. Variations include gluten-free cake, dairy-free yogurt and whipped cream, adding lemon zest or vanilla extract, and adding crunch with nuts or granola.
