fresh peach caprese salad - featured image

A bright and fresh summer salad featuring juicy peaches, creamy burrata, and fragrant basil, drizzled with olive oil and balsamic glaze for a perfect balance of sweet and savory flavors.

Ingredients

Scale
  • 3 ripe peaches, sliced thinly
  • 8 ounces (about 225g) fresh burrata cheese
  • 1 cup loosely packed fresh basil leaves, washed and dried
  • 2 tablespoons extra virgin olive oil
  • 1 to 2 tablespoons balsamic glaze
  • Pinch of flaky sea salt
  • Freshly ground black pepper to taste

Instructions

  1. Rinse peaches under cool water and pat dry. Slice into thin wedges about 1/4 inch thick and set aside.
  2. Remove burrata from packaging and gently pat dry. Place in the center of a serving plate, tearing into smaller pieces if desired.
  3. Rinse and dry basil leaves thoroughly. Pluck leaves from stems and scatter evenly over and around the burrata and peaches.
  4. Neatly layer peach slices around and partially overlapping the burrata, alternating with basil leaves in a casual pattern.
  5. Lightly sprinkle flaky sea salt and freshly ground black pepper over the entire salad.
  6. Drizzle olive oil evenly over the salad, followed by a thinner drizzle of balsamic glaze.
  7. Let the salad rest at room temperature for about 5 minutes before serving to allow flavors to mingle.

Notes

Use ripe but firm peaches for best texture. Dry basil leaves thoroughly to avoid sogginess. If balsamic glaze is unavailable, reduce balsamic vinegar by simmering until syrupy. Serve fresh and at room temperature. Leftovers should be refrigerated and consumed within 24 hours.
