  • 1 can (15 oz) black-eyed peas, drained and rinsed (optional)
  • 1 cup fresh or frozen corn kernels (if frozen, thawed)
  • 1 cup cherry tomatoes, quartered
  • 1 medium red bell pepper, diced
  • 1 small red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced (optional)
  • 3 tablespoons fresh lime juice
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon honey or agave syrup
  • Crispy tortilla chips or favorite crunchy chips for serving

Instructions

  1. Drain and rinse the black beans and black-eyed peas thoroughly to remove excess salt and starch.
  2. Dice the red bell pepper, finely chop the red onion, quarter the cherry tomatoes, and mince the jalapeño if using. Chop the cilantro last and place all in a large mixing bowl.
  3. Add the corn kernels to the bowl with the other ingredients.
  4. In a small bowl, whisk together lime juice, olive oil, ground cumin, chili powder, honey, salt, and pepper until emulsified.
  5. Pour the dressing over the bean and veggie mixture and toss gently but thoroughly to coat evenly.
  6. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, ideally one hour, to let flavors meld.
  7. Before serving, stir the dip and transfer to a serving dish. Serve with crispy chips arranged around or on the side.

Notes

If the dip looks dry after chilling, add a splash more olive oil or lime juice. Avoid prepping chips too early to keep them crispy. For extra heat, add more jalapeños or cayenne pepper. Warming chips in a 350°F oven for 5 minutes before serving enhances crunch.
