A simple, rustic appetizer featuring fresh heirloom tomatoes, basil, garlic, and toasted crusty bread. Perfect for summer gatherings and quick to prepare.

  • 3 cups fresh heirloom tomatoes, diced (about 450g / 1 lb)
  • 2 cloves garlic, finely minced
  • 1/4 cup fresh basil leaves, thinly sliced (about 10g / 0.35 oz)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon balsamic vinegar (optional)
  • Salt and freshly cracked black pepper to taste
  • 1 baguette or rustic Italian bread loaf, sliced about 1/2-inch thick (about 250g / 8.8 oz)
  • 1 clove garlic, halved (for rubbing on toast)
  • Extra olive oil for brushing bread slices

Instructions

  1. Wash and dry heirloom tomatoes. Dice into roughly 1/2-inch pieces and place in a mixing bowl.
  2. Add minced garlic, sliced basil, 2 tablespoons olive oil, and 1 teaspoon balsamic vinegar if using. Season with salt and pepper. Gently toss to coat without crushing. Let sit for 10 minutes.
  3. Slice baguette into 1/2-inch slices. Brush both sides lightly with olive oil.
  4. Toast bread slices in a preheated skillet over medium heat or under a broiler for 2-3 minutes per side until golden and crisp.
  5. While bread is warm, rub each slice with halved garlic clove to infuse subtle garlic flavor.
  6. Spoon tomato mixture generously onto each toast slice just before serving. Drain excess juices if needed to avoid soggy bread. Garnish with extra basil leaves.

Notes

Use ripe but firm heirloom tomatoes to avoid soggy topping. Toast bread just before serving and rub with garlic while warm to keep bread crisp and flavorful. Gently toss tomato mixture to avoid mushy texture. Can substitute gluten-free bread or add cheese for variation.
