A fresh and creamy twist on classic cowboy caviar combining avocado and corn for a satisfying, textured dip or salad perfect for gatherings and quick meals.

  • 1 cup black beans, rinsed and drained (canned works perfectly)
  • 1 cup fresh or frozen corn kernels
  • 1 cup cherry tomatoes, quartered
  • 1/2 cup finely diced red bell pepper
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1 ripe avocado, mashed
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 garlic clove, minced
  • 1/4 teaspoon ground cumin
  • Salt and pepper to taste
  • Optional: 1/4 teaspoon chili powder or cayenne pepper

Instructions

  1. Rinse and drain the black beans well. If using frozen corn, thaw and drain. Quarter the cherry tomatoes, dice the red bell pepper, chop the red onion finely, and roughly chop the cilantro.
  2. In a small bowl, mash one ripe avocado with a fork until mostly smooth but still a bit chunky. Add 2 tablespoons of fresh lime juice, 2 tablespoons of olive oil, the minced garlic, ground cumin, salt, pepper, and chili powder if using. Mix well to combine.
  3. In a medium mixing bowl, gently stir together the black beans, corn, cherry tomatoes, red bell pepper, red onion, and cilantro. Use a spoon or spatula to fold them so everything is evenly distributed.
  4. Pour the avocado mixture over the bean and veggie mixture. Gently fold everything together until the dressing coats the ingredients evenly, being careful not to mash the vegetables too much. The texture should be chunky and fresh.
  5. Taste the cowboy caviar and add more salt, lime juice, or chili powder if needed. Cover and refrigerate for at least 20 minutes to let the flavors marry and the dressing to thicken slightly.
  6. Spoon the fresh creamy cowboy caviar into a serving bowl. Garnish with extra cilantro leaves or a sprinkle of chili powder if desired. Serve with tortilla chips or as a topping for grilled meats or tacos.

Notes

Use ripe but firm avocados to avoid mushy texture. Do not overmix to preserve texture. Fresh lime juice is essential to prevent browning and add brightness. Chill for at least 20 minutes before serving for best flavor. Optional chili powder or cayenne can be adjusted for heat. Dressing can be thinned with a splash of water or olive oil if too thick.
