  • 12 slices white bread, crusts removed
  • Optional: thin cucumber slices for garnish

Instructions

  1. Peel the cucumber, cut it lengthwise, and scoop out the seeds with a spoon. Grate the cucumber finely using a box grater or pulse in a food processor. Place the grated cucumber in a fine-mesh sieve or cheesecloth and press or squeeze to remove as much excess moisture as possible (about 10 minutes).
  2. In a mixing bowl, combine the softened cream cheese and mayonnaise. Stir until smooth and creamy. Add the grated cucumber, chopped fresh dill, lemon juice, sugar, salt, and pepper. Mix well until all ingredients are fully incorporated and the spread has a silky texture. Taste and adjust seasoning if needed (5 minutes).
  3. Cover the bowl with plastic wrap and refrigerate the spread for at least 30 minutes to allow flavors to meld and firm up the spread.
  4. While the spread chills, trim the crusts off the bread slices using a sharp serrated knife. If the bread is a bit stale, lightly toast it for a few seconds to regain firmness but keep it soft.
  5. Spread about 2 tablespoons of the chilled Benedictine spread onto each slice of bread. Top with another slice to form sandwiches. Cut each sandwich into triangles or small rectangles. Garnish with a thin cucumber slice on top if desired (10 minutes).
  6. Arrange the sandwiches on a platter and serve immediately, or cover with a damp paper towel and plastic wrap to keep fresh if making ahead. Best eaten the same day but can be stored in the fridge for up to 24 hours.

Remove cucumber seeds and squeeze out excess moisture to prevent soggy sandwiches. Use softened cream cheese for smooth spread.
