  • 1 cup (227 grams) salted butter
  • 3/4 cup (150 grams) granulated sugar
  • 2 cups (250 grams) all-purpose flour
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • Sea salt for sprinkling

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together 1 cup (227 grams) of salted butter and 3/4 cup (150 grams) of granulated sugar until light and fluffy, about 2-3 minutes with an electric mixer.
  3. Mix in 1 large egg yolk and 1 teaspoon of vanilla extract. Beat until combined.
  4. Gradually add 2 cups (250 grams) of all-purpose flour. Mix until a smooth dough forms, being careful not to overmix.
  5. Wrap the dough in plastic wrap and refrigerate for 15 minutes.
  6. On a lightly floured surface, roll out the dough to about 1/4-inch thickness. Use a cookie cutter to cut out shapes and place them on the prepared baking sheet.
  7. Sprinkle a pinch of sea salt on each cookie.
  8. Bake for 10-12 minutes or until the edges are golden.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
