A creamy and cheesy comfort dish inspired by French onion soup, perfect for cozy nights or potlucks.

  • 1 cup orzo
  • 2 yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup heavy cream
  • 1 cup Gruyère cheese, shredded
  • 1 teaspoon thyme (fresh or dried)
  • Salt and pepper to taste

Instructions

  1. Heat 2 tablespoons of butter and 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until golden brown and caramelized (about 20-25 minutes). Add the garlic during the last 2 minutes of cooking. Season with salt and pepper.
  2. Preheat the oven to 375°F (190°C). In the same skillet, stir in the orzo and let it toast slightly for 2-3 minutes.
  3. Pour in the beef broth and bring to a gentle simmer. Cook for about 8-10 minutes, stirring occasionally, until the orzo absorbs most of the liquid.
  4. Lower the heat and stir in the heavy cream. Let it simmer for another 2-3 minutes until the mixture becomes creamy.
  5. Sprinkle the shredded Gruyère cheese evenly over the top. If your skillet isn’t oven-safe, transfer the mixture into a baking dish first.
  6. Place the skillet or baking dish in the oven and bake for 15-20 minutes, or until the cheese is golden and bubbly.
  7. Remove from the oven and sprinkle with fresh thyme. Serve hot and enjoy!

Notes

Take your time caramelizing the onions for the best flavor. Toasting the orzo adds a nutty depth to the dish. Freshly grated cheese melts better than pre-shredded.
