Ingredients

Scale
  • 1 ½ cups (190 g) all-purpose flour, sifted
  • 2 teaspoons (8 g) baking powder
  • 2 tablespoons (25 g) granulated sugar
  • ½ teaspoon (3 g) salt
  • 1 ¼ cups (300 ml) whole milk (or almond/oat milk for dairy-free)
  • 2 large eggs, room temperature
  • 3 tablespoons (45 g) unsalted butter, melted and slightly cooled
  • 1 teaspoon (5 ml) vanilla extract
  • Food coloring or natural beet juice (optional)
  • Chocolate chips or blueberries for decorating eyes and noses (optional)

Instructions

  1. Mix dry ingredients: In a large bowl, sift together flour, baking powder, sugar, and salt. (Approx. 5 minutes)
  2. Combine wet ingredients: In another bowl, whisk milk, eggs, melted butter, and vanilla extract until well blended. (Approx. 3 minutes)
  3. Make the batter: Slowly pour wet mixture into dry ingredients, stirring gently. Do not overmix; some lumps are okay. Batter should be thick but pourable. Add more milk if too thick. (Approx. 2 minutes)
  4. Preheat the pan: Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil. Test readiness by sprinkling water drops; they should sizzle and evaporate quickly. (Approx. 3 minutes)
  5. Shape the bunnies: Using a squeeze bottle or spoon, pour a large oval for the bunny’s face, then two smaller elongated ovals on top for ears. Connect ears to head with a little batter. (Approx. 5 minutes per batch)
  6. Add details: Before flipping, place chocolate chips or blueberries for eyes and nose (optional).
  7. Cook and flip: Cook pancakes for 2-3 minutes until bubbles form and edges look set. Flip carefully and cook the other side for 1-2 minutes until golden brown. (Approx. 5 minutes)
  8. Keep warm and serve: Transfer pancakes to a plate and keep warm in a low oven (~200°F/95°C) while finishing the rest. Serve with maple syrup, fresh fruit, or toppings.

Notes

Do not overmix the batter to keep pancakes fluffy. Use room temperature eggs and milk for better texture. Keep heat medium to low to avoid burning. Use a squeeze bottle for easier shaping. Flip pancakes only once. Keep pancakes warm in a low oven while cooking the rest. If batter is too runny, add flour a tablespoon at a time.
