  • 3 tablespoons cream cheese, softened
  • 1/4 teaspoon cream of tartar
  • 1 tablespoon honey or a pinch of salt (optional)
  • 46 slices roasted turkey breast (deli-style, preferably nitrate-free)
  • 1 ripe avocado, peeled and thinly sliced
  • Fresh baby spinach or arugula
  • 1 teaspoon mayonnaise or Greek yogurt (optional)
  • Fresh lemon juice (a few drops)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Separate the eggs carefully, placing the whites in a clean, dry bowl.
  3. Beat the egg whites with cream of tartar on medium-high speed until stiff peaks form (3-5 minutes).
  4. In a separate bowl, mix the egg yolks, softened cream cheese, and honey or salt until smooth.
  5. Gently fold the egg yolk mixture into the egg whites using a spatula, keeping as much air as possible.
  6. Spoon the batter onto the parchment-lined tray in 6 equal mounds, shaping into rounds about 4 inches wide and 1 inch thick.
  7. Bake for 25-30 minutes until dry and light with a slightly golden bottom.
  8. Remove from oven and let cool completely.
  9. Prepare the sandwich filling: slice avocado and toss with lemon juice, salt, and pepper; spread mayonnaise or Greek yogurt on cloud bread if desired.
  10. Assemble sandwich by layering turkey, avocado, and fresh greens between two cloud bread slices; press lightly.

Notes

Use fresh eggs for better volume. Whip egg whites to stiff peaks and fold gently to keep air in the batter. Bake low and slow at 300°F to avoid browning. Cool bread completely before assembling to prevent tearing. Store cloud bread separately and warm slightly before serving if refrigerated.
