Instructions

  2. In a large pot, combine chopped peaches, sugar, and lemon juice. Stir gently and let sit for 20-30 minutes to macerate.
  3. Stir in ground cinnamon, cardamom, a pinch of salt (if using), and water. Turn heat to medium.
  4. Bring mixture to a gentle boil, then reduce heat to maintain a steady simmer. Stir frequently to avoid sticking and burning. Simmer for 25-30 minutes.
  5. Test jam consistency by placing a spoonful on a chilled plate. Let cool for a minute, then run your finger through it. If it wrinkles and holds shape, jam is ready; if not, continue simmering and test every 5 minutes.
  6. Optional: For smoother jam, use a potato masher or immersion blender to break down larger pieces, but keep some texture for homemade feel.
  7. Sterilize jars and lids by boiling or running through a hot dishwasher cycle while jam cooks.
  8. Ladle hot jam into sterilized jars, leaving about ¼ inch headspace. Seal tightly.
