  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1/4 cup honey (85g)
  • 3 tablespoons fresh lime juice
  • 3 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup chicken broth (60ml)
  • 810 small tortillas (corn or flour)
  • Fresh cilantro, chopped (a handful)
  • Thinly sliced red onion
  • Avocado slices or guacamole

Instructions

  1. Rinse and pat dry 2 pounds of boneless, skinless chicken thighs or breasts.
  2. In a small bowl, combine 1/4 cup honey, 3 tablespoons fresh lime juice, 3 minced garlic cloves, 1 teaspoon chili powder, 1/2 teaspoon cumin, 1 teaspoon salt, 1/2 teaspoon black pepper, and optional 1/4 teaspoon red pepper flakes. Stir until well blended.
  3. Pour 1/4 cup chicken broth into the slow cooker, then add the honey lime mixture. Stir to distribute evenly.
  4. Place chicken pieces into the slow cooker, flipping once to coat both sides and keep mostly submerged.
  5. Cover and cook on low for 5 to 6 hours until chicken is tender and shreds easily. Alternatively, cook on high for 3-4 hours.
  6. Remove chicken and shred with two forks. Return shredded chicken to slow cooker and stir to coat with sauce.
  7. Warm 8-10 small tortillas in a dry skillet over medium heat for 30 seconds per side or wrap in foil and warm in a 350°F oven for 10 minutes.
  8. Assemble tacos by spooning shredded chicken onto tortillas and topping with chopped cilantro, sliced red onions, and avocado or guacamole.
  9. Serve immediately while warm.

Notes

Use chicken thighs for juicier meat or breasts for leaner option. Add chicken broth to keep chicken moist. Freshly minced garlic and fresh lime juice improve flavor. If sauce is too thin after shredding, cook uncovered on high for 15-20 minutes to thicken. For spicy variation, add jalapeños or chipotle peppers. Corn tortillas make this recipe gluten-free. Leftovers keep well refrigerated for 3 days or frozen for up to 2 months.
