A simple and comforting side dish featuring tender roasted carrots glazed with honey and fresh thyme, perfect for any occasion and ready in under 30 minutes.

  • 1 pound carrots, peeled and cut into sticks or chunks
  • 2 tablespoons honey (raw or wildflower preferred)
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons fresh thyme leaves plus a few sprigs for roasting
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel the carrots and cut them into uniform sticks or chunks about 3-4 inches long.
  3. In a medium bowl, whisk together honey, olive oil, sea salt, black pepper, and fresh thyme leaves.
  4. Add the cut carrots to the bowl and toss well to coat each piece with the honey-thyme mixture. If honey is too thick, warm it in the microwave for 10 seconds to loosen.
  5. Spread the carrots in a single layer on a baking sheet lined with parchment paper or a silicone baking mat, avoiding overcrowding.
  6. Scatter a few whole fresh thyme sprigs over the carrots.
  7. Roast in the oven for 25-30 minutes, turning the carrots halfway through, until tender with caramelized edges.
  8. Once out of the oven, drizzle the carrots with lemon juice and toss gently to coat.
  9. Serve warm, directly from the oven, or at room temperature.

Notes

If honey is too thick, warm it slightly to help coat the carrots evenly. Toss carrots halfway through roasting for even caramelization. Broil for 2-3 minutes at the end if more caramelization is desired, watching closely to avoid burning. Use fresh thyme for best flavor; if using dried thyme, add half the amount when mixing the glaze. Avoid overcrowding the baking sheet to prevent steaming.
