Flavorful Loaded Queso Fundido Dip with Chorizo and Hatch Peppers

A smoky, creamy, and spicy queso fundido dip featuring crispy chorizo and roasted Hatch peppers, perfect for parties and gatherings.

  • 8 ounces Mexican chorizo, casing removed
  • 2 medium Hatch green chilies, roasted, peeled, and sliced
  • 8 ounces Queso Oaxaca cheese, shredded
  • 4 ounces Monterey Jack cheese, shredded
  • ½ medium white onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 tablespoons fresh cilantro, chopped (optional)
  • 1 teaspoon fresh lime juice
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Roast the Hatch peppers over an open flame, under a broiler, or on a grill until the skin blisters and chars (about 7-10 minutes). Place them in a covered bowl or sealed plastic bag to steam for 10 minutes. Once cooled, peel off the charred skin, remove seeds, and slice into strips.
  2. Heat 1 tablespoon olive oil in an oven-safe skillet over medium heat. Add the chorizo, breaking it up with a spoon. Cook until fully browned and crispy in spots, about 8 minutes. Drain excess grease if needed, leaving a little for flavor.
  3. Add chopped onions to the skillet with chorizo and cook until translucent, about 3 minutes. Stir in minced garlic and cook another minute until fragrant.
  4. Stir the roasted Hatch peppers into the skillet. Season with salt and freshly ground black pepper to taste. Remove from heat.
  5. Evenly spread shredded Oaxaca and Monterey Jack cheeses over the chorizo and pepper mixture.
  6. Place the skillet under a preheated broiler on high for 5 to 7 minutes, watching closely to prevent burning. The cheese should bubble and turn golden brown.
  7. Remove from oven, squeeze fresh lime juice over the top, and sprinkle chopped cilantro. Let the dip cool for a couple of minutes before serving.

Notes

Keep a close watch during broiling as cheese can burn quickly. Use fresh chorizo for best flavor and texture. Rest dip 3-5 minutes after broiling to thicken and cool slightly. Hatch peppers add unique smoky flavor; if unavailable, use roasted poblano peppers.
