These shrimp skewers feature a bright lemon herb marinade grilled to perfection, paired with a creamy garlic aioli for dipping. Quick and easy, they deliver a perfect balance of texture and fresh flavor.

  • 1 pound (450g) large shrimp, peeled and deveined (tail-on or off)
  • 2 tablespoons fresh lemon juice (about 1 lemon)
  • 1 tablespoon lemon zest
  • 3 tablespoons olive oil (extra virgin preferred)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste
  • For the Garlic Aioli:
  • 1/2 cup mayonnaise
  • 1 clove garlic, finely minced or grated
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon Dijon mustard (optional)
  • Salt and pepper to taste

Instructions

  1. Rinse the shrimp under cold water and pat dry thoroughly with paper towels.
  2. In a medium bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, parsley, thyme, oregano, salt, and pepper to make the marinade.
  3. Toss the shrimp in the marinade until well coated. Cover and refrigerate for 15-20 minutes.
  4. While shrimp marinates, combine mayonnaise, grated garlic, lemon juice, Dijon mustard, salt, and pepper in a small bowl. Whisk until smooth.
  5. Remove shrimp from marinade, letting excess drip off. Thread 4-5 shrimp per skewer, piercing through the thickest part.
  6. Preheat grill or grill pan to medium-high heat (about 400°F / 200°C).
  7. Place skewers on the grill and cook for 2-3 minutes per side until shrimp turn opaque with slight pink and edges develop crispiness.
  8. Remove from grill and serve immediately with garlic aioli and optional lemon wedges or fresh herbs.

Notes

Dry shrimp thoroughly before marinating to ensure proper charring. Do not marinate longer than 20 minutes to avoid ‘cooking’ the shrimp with acid. Preheat grill well and flip shrimp only once to maintain texture. Garlic aioli can be made up to 2 days ahead and stored in the fridge.
