  • 1/4 cup honey (60 ml)
  • 2 tablespoons sriracha sauce (30 ml)
  • 2 tablespoons low sodium soy sauce (30 ml)
  • 3 cloves garlic, minced
  • 1 tablespoon rice vinegar (15 ml)
  • 1 teaspoon sesame oil (5 ml)
  • 2 tablespoons toasted sesame seeds (about 18 grams)
  • 1/2 teaspoon freshly ground black pepper (2 grams)
  • Optional: pinch of crushed red pepper flakes
  • Optional: chopped scallions for garnish

Instructions

  1. In a large mixing bowl, whisk together honey, sriracha, soy sauce, rice vinegar, sesame oil, minced garlic, and black pepper until smooth.
  2. Add chicken drumsticks to the bowl and turn to coat evenly in the marinade. Cover loosely and let rest at room temperature for at least 15 minutes or refrigerate up to 2 hours for deeper flavor.
  3. Preheat grill to medium-high heat (around 375°F / 190°C). Lightly oil the grates to prevent sticking.
  4. Toast sesame seeds in a dry skillet over medium heat, stirring frequently until golden and fragrant, about 2 minutes. Remove from heat and set aside.
  5. Place chicken on the grill and cook for about 25 minutes, turning every 5-7 minutes to cook evenly.
  6. During the last 10 minutes of grilling, brush additional marinade onto the drumsticks every 3-4 minutes to build a sticky glaze. Watch for flare-ups from honey dripping on flames.
  7. Check for doneness with a meat thermometer; internal temperature should reach 165°F (74°C) and skin should be caramelized.
  8. Transfer chicken to a platter, sprinkle toasted sesame seeds on top, and let rest for 5 minutes before serving.

Notes

Brush the glaze on multiple times during grilling to build layers of sticky flavor and prevent burning. Turn drumsticks every 5-7 minutes to cook evenly and avoid flare-ups. Let chicken rest after grilling to keep it juicy. For gluten-free, substitute soy sauce with tamari or coconut aminos. If no grill is available, bake at 425°F (220°C) for 35-40 minutes, brushing with glaze halfway through and broil briefly to caramelize.
