  • 12 slices thin-cut bacon
  • 1/4 cup (85g) pure honey
  • 2 tablespoons (30ml) sriracha (adjust to taste)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon freshly cracked black pepper
  • Optional garnish: sesame seeds or chopped green onions

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a medium bowl, whisk together honey, sriracha, garlic powder, and black pepper to prepare the glaze.
  3. Cut each slice of bacon in half crosswise. Wrap each little smokie with a half-slice of bacon, securing with a toothpick if necessary.
  4. Place a wire rack over a rimmed baking sheet (optional). Arrange the bacon-wrapped smokies seam side down on the rack or directly on a parchment or silicone mat-lined baking sheet.
  5. Brush each wrapped smokie generously with the honey-sriracha glaze.
  6. Bake for 20-25 minutes, turning and basting once halfway through baking. The bacon should be crispy and caramelized, and the glaze sticky and bubbling.
  7. If desired, broil for an additional 1-2 minutes to crisp the bacon further, watching carefully to avoid burning.
  8. Let the smokies rest for a few minutes on the baking sheet. Garnish with sesame seeds or chopped green onions if desired before serving.
