Flavorful Grilled Peach and Burrata Salad with Balsamic Honey Glaze

A smoky-sweet grilled peach salad paired with creamy burrata and a sticky, tangy balsamic honey glaze. Perfect for summer parties or casual dinners, this salad balances fresh, rich, and tangy flavors beautifully.

  • 34 ripe but firm peaches, halved and pitted
  • 8 ounces burrata cheese
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • A handful fresh basil leaves, torn (optional)
  • A pinch of salt
  • Freshly ground black pepper to taste
  • 4 cups arugula or mixed greens
  • 1/4 cup toasted pine nuts or slivered almonds (optional)

Instructions

  1. Wash and dry peaches. Slice each in half and remove pits. Brush cut sides with olive oil and let sit at room temperature for about 5 minutes.
  2. Preheat grill or grill pan over medium-high heat.
  3. Place peaches cut side down on grill. Grill 3-4 minutes until grill marks appear and peaches soften slightly. Flip and grill skin side for 2 more minutes. Remove and let cool slightly.
  4. In a small saucepan, combine balsamic vinegar and honey. Warm over low heat, stirring frequently until thickened and glossy (3-5 minutes). Remove from heat and cool.
  5. Arrange arugula or mixed greens on a serving platter. Tear burrata into bite-sized pieces and scatter over greens. Season with salt and black pepper.
  6. Place grilled peaches on top of greens and burrata. Drizzle balsamic honey glaze evenly over salad. Scatter torn basil leaves and toasted nuts if using.
  7. Let salad sit a few minutes to meld flavors. Serve at room temperature or slightly warm. Optionally drizzle with olive oil or sprinkle flaky sea salt before serving.

Notes

Use firm but ripe peaches to avoid mushy grilled fruit. Oil grill or pan well to prevent sticking. Warm glaze gently to avoid burning honey. Burrata is best fresh; mozzarella can substitute. For vegan option, use cashew cheese and maple syrup instead of honey.
