  • 1 pound large shrimp, peeled and deveined (tail-on)
  • Wooden or metal skewers (soaked if wooden)
  • 4 tablespoons unsalted butter, melted
  • 2 teaspoons Cajun seasoning
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon smoked paprika (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Rinse and pat the shrimp dry with paper towels.
  2. In a medium bowl, combine melted butter, Cajun seasoning, minced garlic, lemon juice, smoked paprika, salt, and pepper. Whisk until well mixed.
  3. Toss the shrimp in the Cajun butter glaze, coating evenly. Let sit for 10-15 minutes at room temperature.
  4. Thread shrimp onto skewers through the thickest part, leaving space between each shrimp.
  5. Preheat grill to medium-high heat (about 400°F).
  6. Grill shrimp skewers for 2-3 minutes per side, brushing with extra Cajun butter glaze while cooking.
  7. Remove skewers from grill and let rest for 2-3 minutes.
  8. Serve garnished with fresh lemon wedges or chopped parsley if desired.

Notes

Dry shrimp thoroughly before marinating for better sear. Soak wooden skewers for 30 minutes to prevent burning. Brush glaze in thin layers to avoid flare-ups. Watch shrimp closely to avoid overcooking; shrimp are done at 120°F (49°C). Can broil in oven if no grill is available.
