  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1 head iceberg or butter lettuce (large, crisp leaves)
  • Optional toppings: 1 ripe avocado (sliced or mashed), fresh cilantro leaves, fresh lime wedges, shredded cheddar or Mexican cheese blend, fresh salsa or pico de gallo

Instructions

  1. Prepare the lettuce leaves by gently separating them from the head, rinsing under cold water, and patting dry. Set aside on a plate lined with paper towels.
  2. Finely dice the onion and mince the garlic cloves. For milder onion flavor, soak chopped onions in cold water for 5 minutes, then drain.
  3. Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until translucent, about 3-4 minutes.
  4. Add minced garlic and cook for 30 seconds until fragrant, being careful not to burn.
  5. Add ground turkey to the skillet, breaking it apart with a spatula. Cook until no longer pink, about 6-8 minutes, stirring occasionally.
  6. Sprinkle chili powder, cumin, smoked paprika, crushed red pepper flakes (if using), salt, and black pepper over the turkey. Stir well and cook for another 2 minutes to bloom the spices.
  7. Spoon turkey filling into each lettuce leaf. Top with avocado, cilantro, cheese (if using), lime juice, and salsa or pico de gallo as desired.
  8. Serve immediately to keep lettuce crisp. For meal prep, store filling and lettuce separately and assemble before serving.

Avoid overcooking the turkey to keep it juicy. Pat lettuce leaves dry to maintain crispness. Toast spices briefly in oil before adding onions for deeper flavor. Assemble lettuce boats just before serving to prevent sogginess. Ground chicken or lean beef can be substituted for turkey. For dairy-free, omit cheese or use plant-based alternatives.
