  • Red Layer: 1 cup cranberry juice (unsweetened or lightly sweetened)
  • 1/2 cup water
  • 2 tablespoons granulated sugar (adjust to taste)
  • 2 teaspoons unflavored gelatin powder (about one envelope)
  • 1/4 cup vodka
  • White Layer: 1 cup full-fat coconut milk
  • 1/2 cup whole milk or milk alternative (almond, oat, etc.)
  • 1/4 cup granulated sugar
  • 2 teaspoons unflavored gelatin powder
  • 1/4 cup vodka
  • Blue Layer: 1 cup blueberry juice or fresh/frozen blueberry puree strained
  • 1/2 cup water
  • 2 tablespoons granulated sugar
  • 2 teaspoons unflavored gelatin powder
  • 1/4 cup vodka

Instructions

  1. Prepare the Red Layer: Sprinkle 2 teaspoons gelatin over 1/2 cup cold water and let bloom for 5 minutes. Warm 1 cup cranberry juice and 2 tablespoons sugar over low heat until sugar dissolves. Remove from heat, stir in bloomed gelatin until dissolved. Cool slightly, mix in 1/4 cup vodka. Pour into shot cups filling one-third full. Refrigerate at least 45 minutes until firm but not fully set.
  2. Prepare the White Layer: Sprinkle 2 teaspoons gelatin over 1/4 cup cold milk and let bloom for 5 minutes. Warm coconut milk, whole milk, and 1/4 cup sugar over low heat until sugar dissolves. Remove from heat, stir in bloomed gelatin until smooth. Cool to room temperature, stir in 1/4 cup vodka. Gently spoon over red layer filling the next third. Refrigerate 45 minutes to 1 hour until set.
  3. Prepare the Blue Layer: Bloom 2 teaspoons gelatin in 1/2 cup cold water for 5 minutes. Warm blueberry juice and 2 tablespoons sugar until sugar dissolves. Stir in gelatin until melted, cool slightly, add 1/4 cup vodka. Pour gently over white layer filling to the top. Refrigerate at least 4 hours or overnight.
  4. Serve chilled straight from the fridge with a small spoon or enjoy directly from the cup.

Notes

Let each gelatin layer cool to room temperature before pouring over the previous layer to avoid mixing colors. Bloom gelatin properly for smooth texture. For a softer texture, reduce gelatin by half a teaspoon. Non-alcoholic versions can be made by substituting vodka with fruit juice or sparkling water. Agar-agar can be used for a vegan version following package instructions.
