  • 1 ½ cups (about 180g) grated zucchini, squeezed to remove excess moisture
  • ½ cup (90g) dark chocolate chips or chopped dark chocolate (60-70% cocoa)
  • For the Dark Chocolate Frosting:
  • 4 ounces (115g) good-quality dark chocolate, chopped
  • ½ cup (120ml) heavy cream or full-fat coconut milk for dairy-free option
  • 2 tablespoons (28g) unsalted butter, softened
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Grate 1 ½ cups of zucchini using a food processor or box grater. Place the shredded zucchini in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible.
  2. Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving some overhang and lightly grease the parchment.
  3. In a medium bowl, sift together the flour, cocoa powder, baking powder, and salt. Whisk to combine evenly.
  4. In a large bowl, beat the granulated and brown sugars with eggs until pale and slightly thickened, about 3-4 minutes. Add oil and vanilla extract, mix well.
  5. Gently fold the grated zucchini into the wet mixture.
  6. Gradually add the dry ingredients to the wet, folding gently until just combined. Avoid overmixing.
  7. Fold in the dark chocolate chips or chopped chocolate.
  8. Pour batter into prepared pan and smooth the top. Bake for 28-32 minutes, testing with a toothpick near the center; it should come out with a few moist crumbs but no wet batter.
  9. Cool brownies completely in the pan on a wire rack.
  10. To make frosting: Heat cream gently until steaming (not boiling). Pour over chopped dark chocolate and let sit for 2 minutes, then stir until smooth.
  11. Stir in softened butter, vanilla, and a pinch of salt. Cool slightly until thick but spreadable.
