A rich and indulgent banana bread recipe featuring ripe bananas and gooey chocolate chunks for a moist, fudgy texture that’s perfect for any occasion.

Ingredients

Scale
  • 3 medium ripe bananas, mashed
  • 1 ¾ cups (220 grams) all-purpose flour
  • ¼ cup (25 grams) unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (100 grams) granulated sugar
  • ¼ cup (50 grams) packed brown sugar
  • 2 large eggs, room temperature
  • ½ cup (115 grams) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • 1 cup (170 grams) chocolate chunks (semi-sweet and dark chocolate mix recommended)
  • Optional: ½ cup (60 grams) chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your 9×5-inch loaf pan by greasing it or lining it with parchment paper.
  2. Mash the bananas in a medium bowl using a fork until mostly smooth with a few small lumps remaining.
  3. Add the melted butter, granulated sugar, brown sugar, eggs, and vanilla extract to the mashed bananas. Whisk until well combined and slightly fluffy.
  4. In a large mixing bowl, sift together the all-purpose flour, cocoa powder, baking soda, and salt.
  5. Pour the banana mixture into the flour bowl and gently fold with a wooden spoon or spatula until just combined. Do not overmix.
  6. Fold in the chocolate chunks and nuts (if using) gently to distribute evenly.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake in the preheated oven for 50-60 minutes. Start checking at 50 minutes by inserting a toothpick in the center; it should come out with a few moist crumbs but no wet batter.
  9. Cool the bread in the pan for 10 minutes, then transfer to a cooling rack to cool completely.
  10. Slice and enjoy! Best served slightly warm or at room temperature.

Notes

Use very ripe bananas for best sweetness and moisture. Do not overmix the batter to keep the bread tender. Fold in chocolate chunks last to prevent sinking. Tent with foil if top browns too quickly. Let bread cool completely before slicing to avoid gummy texture. For extra moist crumb, add a tablespoon of sour cream or Greek yogurt. Nut-free option: omit nuts or use seeds. Vegan adaptation: use flax eggs, coconut oil, and dairy-free chocolate chips.
