These mini brownie bites deliver an intensely fudgy texture with a gooey center and a slight crisp on the edges, perfect for quick, easy, and crowd-pleasing homemade desserts.

Ingredients

Scale
  • ½ cup (115g) unsalted butter, melted
  • ¾ cup (150g) granulated sugar
  • ¼ cup (50g) brown sugar, packed
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • ⅓ cup (35g) unsweetened cocoa powder, sifted
  • ½ cup (65g) all-purpose flour, sifted
  • ¼ teaspoon salt
  • ½ teaspoon espresso powder (optional)
  • ⅓ cup (60g) mini chocolate chips
  • Red and orange sanding sugar, for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your mini muffin pan thoroughly or line with mini paper liners for easy removal.
  2. Melt the butter in a microwave-safe bowl until fully liquid but not browned (about 30-40 seconds). Let it cool slightly.
  3. In a large mixing bowl, whisk together granulated sugar, brown sugar, and melted butter until smooth and glossy.
  4. Add eggs and vanilla extract. Whisk rapidly until the batter thickens slightly and lightens in color, about 2-3 minutes by hand.
  5. In a separate bowl, sift together cocoa powder, all-purpose flour, salt, and optional espresso powder.
  6. Gradually fold the dry ingredients into the wet mixture gently with a spatula until uniform and thick. Do not overmix.
  7. Fold in mini chocolate chips evenly throughout the batter.
  8. Scoop batter into the mini muffin pan cups nearly to the top using a teaspoon or small cookie scoop.
  9. Sprinkle each brownie with a pinch of red and orange sanding sugar to create the firecracker effect.
  10. Bake for 12-14 minutes, watching closely. Brownies are done when edges look set but centers remain slightly underbaked and shiny.
  11. Cool the brownie bites in the pan for 10 minutes, then transfer to a cooling rack to cool completely.

Notes

Do not overmix the batter to avoid cakey brownies. Use room temperature eggs for better texture. Watch baking time carefully to maintain fudginess. Grease pan well or use paper liners to prevent sticking. Cooling completely improves texture and ease of removal. Optional espresso powder enhances chocolate flavor without coffee taste. Variations include using almond flour for gluten-free, coconut oil for dairy-free, adding nuts or spices for flavor twists.
