  • 1 lb (450 g) ground beef (85% lean)
  • About 8 cups (200 g) sturdy tortilla chips
  • 2 cups (200 g) shredded sharp cheddar cheese (optionally mixed with Monterey Jack)
  • 1 cup (170 g) black beans, drained and rinsed
  • 2 jalapeños, sliced (fresh or pickled)
  • 1 cup (150 g) diced tomatoes (fresh or canned)
  • 3 green onions, sliced
  • 1 tsp ground cumin
  • 1 tbsp chili powder
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Optional toppings: sour cream, guacamole, cilantro, sliced black olives, hot sauce

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat 1 tbsp olive oil in a large cast iron skillet over medium heat. Add ground beef, breaking it up with a spatula. Cook until browned and no longer pink, about 7-10 minutes. Drain excess fat if needed.
  3. Stir in chili powder, ground cumin, garlic powder, salt, and pepper. Cook for another 2 minutes to bloom the spices.
  4. Remove skillet from heat. Spread half of the tortilla chips evenly over the beef.
  5. Sprinkle half the black beans, diced tomatoes, sliced jalapeños, and green onions over the chips.
  6. Top with half the shredded cheddar cheese.
  7. Repeat layering with remaining chips, beans, tomatoes, jalapeños, green onions, and cheese.
  8. Place skillet in preheated oven and bake for 12-15 minutes until cheese is melted and bubbly with crispy edges.
  9. Remove from oven and top with sour cream, guacamole, and fresh cilantro if desired.
  10. Serve immediately while warm and melty.

Notes

Use sturdy, thick-cut tortilla chips to prevent sogginess. Drain excess fat from beef to avoid greasy nachos. Add fresh toppings like sour cream and guacamole after baking to keep chips crisp. Check oven early to avoid burning cheese. For vegetarian version, skip beef and add extra beans or sautéed mushrooms. For gluten-free, use certified gluten-free chips.
