Epic Super Bowl Buffalo Chicken Biscuit Bombs

These biscuit bombs feature a soft, flaky biscuit wrapped around a juicy, tangy buffalo chicken filling, perfect for game day snacks that are quick, easy, and packed with flavor.

  • 2 cups cooked chicken, shredded (rotisserie chicken works great!)
  • ½ cup buffalo wing sauce (Frank’s RedHot recommended)
  • ¼ cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1 tablespoon unsalted butter
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 can (16.3 oz / 462 g) refrigerated biscuit dough (Pillsbury flaky layers biscuits recommended)
  • 1 egg, beaten (for egg wash)
  • Optional: chopped green onions or parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, combine shredded cooked chicken, buffalo wing sauce, ranch dressing, shredded cheddar cheese, melted butter, garlic powder, salt, and pepper. Mix well until evenly coated.
  3. Open the can of refrigerated biscuit dough and separate the biscuits. Roll each biscuit into a flat circle about ¼ inch thick.
  4. Spoon about 2 tablespoons of the buffalo chicken mixture into the center of each biscuit circle. Fold the dough edges up and pinch them together tightly to form a sealed ‘bomb’. Use water on fingers if needed to seal better.
  5. Place each sealed biscuit seam-side down on the prepared baking sheet.
  6. Beat the egg and brush the tops of the biscuit bombs with the egg wash.
  7. Bake for 18-22 minutes or until biscuits are puffed and golden brown.
  8. Remove from oven and let cool for 5 minutes before serving.

Notes

Use shredded rotisserie chicken for convenience. If dough doesn’t seal well, moisten edges with water. Avoid overfilling to prevent leaks. For extra cheese pull, sprinkle cheddar on top before baking. Baking at 375°F ensures golden crust without burning. Can be air fried at 350°F for 10-12 minutes as an alternative.
