  • 1 cup fresh spinach leaves
  • ½ cup shredded cheddar cheese
  • ½ red bell pepper, thinly sliced
  • For the ranch dip: ½ cup sour cream
  • ¼ cup mayonnaise
  • 1 tablespoon ranch seasoning mix
  • Optional: splash of buttermilk for thinner dip

Instructions

  1. Make the ranch spread: In a small mixing bowl, combine softened cream cheese, buttermilk, and ranch seasoning mix. Stir until smooth and fully combined. Adjust seasoning to taste.
  2. Prep the tortillas: Lay tortillas flat on a cutting board. If stiff, microwave for 10 seconds. Spread an even layer of ranch cream cheese mixture over each tortilla, covering edges.
  3. Layer the fillings: Place turkey slices over cream cheese, overlapping slightly. Scatter spinach leaves, then sprinkle shredded cheddar cheese. Arrange red bell pepper slices in a line down the center.
  4. Roll tightly: Starting at one edge, carefully roll tortilla into a tight log, tucking filling in as you go. Wrap tightly in plastic wrap. Repeat with remaining tortillas.
  5. Chill: Refrigerate wrapped rolls for at least 30 minutes (or up to overnight) to firm up.
  6. Slice: Unwrap chilled rolls. Using a sharp serrated knife, slice each log into 1-inch thick pinwheels using a gentle sawing motion. Wipe knife clean between cuts.
  7. Make the ranch dip: In a small bowl, whisk together sour cream, mayonnaise, and ranch seasoning mix. Add a splash of buttermilk if desired for thinner consistency. Refrigerate until serving.
  8. Serve: Arrange pinwheels on a platter with ranch dip on the side. Serve cold or at room temperature.
