A quick and flavorful beef and broccoli stir-fry that combines tender beef with crisp broccoli in a savory sauce, perfect for busy weeknights.

  • 1 pound flank steak or sirloin, thinly sliced against the grain
  • 4 cups fresh broccoli florets (about 300 g), washed and trimmed
  • 1/4 cup low-sodium soy sauce (60 ml)
  • 2 tablespoons oyster sauce (30 ml), optional but recommended
  • 3 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon brown sugar
  • 2 teaspoons cornstarch mixed with 2 tablespoons water
  • 1 teaspoon sesame oil, optional
  • 2 tablespoons vegetable oil
  • 2 stalks green onions, thinly sliced
  • A pinch of red pepper flakes, optional

Instructions

  1. Thinly slice 1 pound flank steak or sirloin against the grain into strips about 1/4 inch thick. Set aside.
  2. In a bowl, combine 2 tablespoons soy sauce, 1 teaspoon cornstarch, and a drizzle of sesame oil (if using). Toss the beef strips in this mixture and let sit for 10-15 minutes.
  3. Wash and cut broccoli into bite-sized florets about 1-1.5 inches.
  4. In a small bowl, whisk together 1/4 cup soy sauce, 2 tablespoons oyster sauce, 1 tablespoon brown sugar, minced garlic, and grated ginger. Set aside.
  5. Heat 1 tablespoon vegetable oil in a skillet or wok over medium-high heat. Stir-fry broccoli for 3-4 minutes until bright green and just tender. Remove and set aside.
  6. Add remaining 1 tablespoon vegetable oil to the pan. Add marinated beef in a single layer (cook in batches if needed). Stir-fry for 2-3 minutes until browned and cooked through but still juicy.
  7. Return broccoli to the pan with beef. Pour sauce over and stir together.
  8. Mix 2 teaspoons cornstarch with 2 tablespoons water and add to the pan to thicken the sauce. Stir for 1-2 minutes until sauce is glossy and coats everything.
  9. Sprinkle sliced green onions and optional red pepper flakes over the stir-fry. Toss quickly and turn off heat.
  10. Serve hot over steamed rice or noodles.

Notes

Keep heat high but not smoking to avoid burning the sauce. Slice beef thinly against the grain for tenderness. Avoid overcrowding the pan to get a good sear. Fresh broccoli is best; if using frozen, thaw and drain well. Adjust soy sauce or sugar to taste after thickening the sauce.
