Ingredients

  • Strawberries (hulled and halved if large)
  • Cantaloupe or mango (cut into 1-inch cubes)
  • Pineapple (cut into 1-inch chunks)
  • Green grapes or kiwi (peeled and cut into wedges)
  • Blueberries or blackberries
  • Red grapes or dried plums
  • Mild cheddar (cut into 1-inch cubes)
  • Colby Jack or Monterey Jack (cut into 1-inch cubes)
  • Gouda or Edam (cut into 1-inch cubes)
  • Mozzarella pearls (bocconcini, drained and patted dry)
  • Fresh mint leaves (optional)
  • Lemon juice (optional, to prevent browning)
  • Honey or balsamic glaze (optional, for drizzling)

Instructions

  1. Wash and dry all fruit thoroughly. Pat everything dry with paper towels.
  2. Prep the fruit: hull and halve strawberries, cut cantaloupe and pineapple into 1-inch cubes, peel kiwi and cut into wedges, leave grapes and blueberries whole.
  3. Cube the cheese: cut cheddar and other block cheese into 1-inch cubes, roughly the same size as fruit pieces.
  4. Arrange ingredients in rainbow order on a large cutting board or tray for easy assembly.
  5. Start skewering: begin with red fruit (strawberry), then orange (cantaloupe), yellow (pineapple), green (grape), blue (blueberry), purple (red grape). Add a cheese cube between fruit pieces or at the end.
  6. Repeat until all skewers are filled, leaving about an inch of space at the bottom of each skewer. Aim for 5-6 pieces of fruit and 2-3 cheese cubes per skewer.
  7. Arrange on a platter in a fan pattern or stacked in rows. Garnish with fresh mint leaves if desired.

Notes

Assemble kabobs no more than 2-3 hours ahead. Cover with plastic wrap and refrigerate until serving. For outdoor parties, set platter over a bed of ice to keep cheese and fruit cold. Soak wooden skewers in water for 10-15 minutes to prevent splintering. Cut fruit and cheese into uniform 1-inch cubes for best presentation.
