A quick and easy no-bake dessert featuring a buttery graham cracker crust, creamy cheesecake filling, and fresh strawberry topping, perfect for summer gatherings.

  • 6 tablespoons (85g) unsalted butter, melted
  • 2 tablespoons granulated sugar (for crust)
  • 16 oz (450g) cream cheese, softened
  • 1 cup (240ml) heavy whipping cream, cold
  • ¾ cup (90g) powdered sugar
  • 1 teaspoon pure vanilla extract
  • 2 cups (300g) fresh strawberries, hulled and sliced
  • 2 tablespoons granulated sugar (for topping)
  • 1 teaspoon fresh lemon juice

Instructions

  1. Prepare the crust: Combine graham cracker crumbs, melted butter, and sugar in a bowl until mixture resembles wet sand and holds when pressed. Press firmly into bottom of 9×9 inch pan. Chill for at least 15 minutes.
  2. Make the cheesecake filling: Beat softened cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until incorporated.
  3. Whip the cream: In a separate bowl, whip cold heavy cream until soft peaks form.
  4. Fold whipped cream into cream cheese mixture gently until combined.
  5. Spread cheesecake filling evenly over chilled crust.
  6. Prepare strawberry topping: Toss sliced strawberries with sugar and lemon juice. Let sit for 10 minutes to macerate.
  7. Spoon strawberry topping over cheesecake layer, spreading gently.
  8. Cover and refrigerate for at least 4 hours or overnight to set.
  9. Cut into squares and serve chilled.

Chill bars overnight for best texture. Use gluten-free graham crackers or almond flour for gluten-free crust. For dairy-free, substitute cream cheese and heavy cream with vegan alternatives. Warm knife under hot water before slicing for clean cuts.
