A cool, creamy, and nostalgic no-bake dessert that tastes like summer camp but looks like a dinner party. Perfect for Labor Day cookouts, this icebox cake layers chocolate mousse, marshmallow fluff, and graham crackers for a crowd-pleasing treat without turning on the oven.

  • 2 sleeves (24 full sheets) honey graham crackers
  • 2 cups (480 ml) heavy cream
  • 12 ounces (340 g) semi-sweet chocolate chips
  • 2 tablespoons (28 g) unsalted butter
  • 1 jar (7 ounces or 200 g) marshmallow fluff
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • Optional: mini marshmallows for topping

Instructions

  1. Make the chocolate mousse base: In a medium saucepan over low heat, combine the chocolate chips and butter. Stir constantly until melted and smooth. Remove from heat, stir in vanilla and salt. Set aside to cool slightly (5-7 minutes).
  2. Whip the cream: In a large bowl, whip the cold heavy cream with an electric mixer on medium-high speed until stiff peaks form (about 3-4 minutes).
  3. Fold it together: Stir about one-third of the whipped cream into the cooled chocolate mixture to lighten it. Then gently fold in the remaining whipped cream with a rubber spatula until no white streaks remain.
  4. Line the dish: Spread a thin layer (2-3 tablespoons) of chocolate mousse on the bottom of a 9×13-inch baking dish.
  5. Build the layers: Arrange a single layer of graham crackers on the mousse, breaking crackers to fill gaps. Spread about one-third of the remaining mousse over the crackers, then dollop and spread one-third of the marshmallow fluff. Repeat layers (graham crackers, mousse, fluff) two more times, ending with a final layer of graham crackers.
  6. Finish the top: Spread the last of the chocolate mousse over the top graham cracker layer, then spread the remaining marshmallow fluff on top.
  7. Chill: Cover tightly with plastic wrap and refrigerate for at least 6 hours, preferably overnight.
  8. Serve: Let sit at room temperature for 10 minutes before slicing. Use a sharp knife (wipe clean between cuts). Top with mini marshmallows and torch if desired.

Notes

Chill overnight for best texture. Let chocolate cool to bathwater temperature before folding into cream to avoid deflating. Use full-fat cream and full-sheet graham crackers for best results. Clean knife between cuts for neat slices. Can be frozen for up to 2 months.
