  • ½ cup (125g) natural creamy peanut butter
  • ¼ cup (85g) honey
  • 2 tablespoons ground flaxseed
  • 1 teaspoon vanilla extract
  • ¼ cup (45g) mini chocolate chips (optional)
  • Pinch of sea salt

Instructions

  1. Measure and prep your ingredients: Gather 1 ½ cups (135g) rolled oats, ½ cup (125g) peanut butter, ¼ cup (85g) honey, 2 tablespoons ground flaxseed, 1 teaspoon vanilla extract, and a pinch of sea salt. If using, have ¼ cup (45g) mini chocolate chips ready.
  2. In your mixing bowl, combine the peanut butter, honey, and vanilla extract. Stir vigorously until smooth and glossy—this usually takes about 2 minutes. If the mixture feels too stiff, a quick 10-second zap in the microwave helps soften the peanut butter (don’t overdo it!).
  3. Toss in the rolled oats, ground flaxseed, sea salt, and mini chocolate chips if using. Stir thoroughly until everything is evenly coated and sticks together. The mixture should be thick but pliable—think cookie dough consistency. If it’s too crumbly, add a teaspoon of honey or peanut butter; if too wet, add a little more oats.
  4. Pinch off about a tablespoon (15g) of mixture and roll it between your palms to form a firm ball. Place each on the parchment-lined tray. You should get roughly 15-18 balls from this batch.
  5. Pop the tray into the fridge for at least 30 minutes to help the energy balls firm up. If you’re in a hurry, 15 minutes in the freezer will do the trick.
  6. Once set, transfer the balls to an airtight container. They keep well in the fridge for up to a week or freeze easily for longer storage.

Notes

If the peanut butter is too stiff, soften it briefly in the microwave. Adjust honey or oats to get the right consistency. Chill the balls to firm up and meld flavors. Wet hands slightly to prevent sticking when rolling. Store in single layers separated by parchment paper to avoid sticking. For gluten-free, use certified gluten-free oats. For vegan/dairy-free, substitute honey with maple syrup.
