  • 1/2 cup (65 grams) all-purpose flour
  • 1/3 cup (70 grams) packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 6 tablespoons (85 grams) unsalted butter, chilled and cut into small cubes

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, gently toss the sliced nectarines and raspberries with the granulated sugar, lemon juice, cornstarch, and vanilla extract if using. Make sure the fruit is evenly coated but avoid smashing the berries.
  3. Transfer the fruit mixture to your baking dish and spread it out evenly.
  4. In a separate bowl, combine the oats, flour, brown sugar, cinnamon, and salt. Mix thoroughly.
  5. Add the chilled butter cubes to the dry mixture. Using a pastry cutter, fork, or your fingertips, work the butter into the oats and flour until the topping resembles coarse crumbs with some pea-sized bits.
  6. Sprinkle the topping evenly over the fruit to cover completely.
  7. Bake for 35-40 minutes until the fruit is bubbling around the edges and the topping is golden brown. If the topping browns too fast, loosely tent with foil halfway through baking.
  8. Let the crisp rest for 10 minutes after baking to allow the juices to thicken.
